My Homemade Vegetable Soup

As many of you have read, I am currently on a weight loss journey and I’m recording this journey on my blog to hopefully help others. A friend of mine lost a significant amount of weight recently and attributed her success to homemade soup. She explained that she replaced one of her meals every day with a homemade soup (sometimes 2 meals per day if possible). I decided to take the plunge and give this a go. To make life easier, I invested in a soup maker.

My Soup Maker

My Morphy Richards soup maker was purchased from Amazon and it has been an absolute God-send!

It was a true bargain at £52.87!

I had previously created homemade soups in a saucepan. This seemed to take up a huge chunk of my day. I had to stand at the pan checking the water levels and then blend the soup once it had cooked. My soup maker does all this for me. I simply load the ingredients, set to the desired setting and let the soup maker do its work. I can set the soup maker to either smooth or chunky. There are 2 additional features; blend and smoothie maker.

My Homemade Vegetable Soup

This is my favourite homemade soup. With the dark nights and the winter weather setting in, this wholesome homemade soup is the perfect healthy comfort food. If you have a soup maker, this delicious recipe will be extremely quick to make. If you haven’t got a soup maker, add the ingredients to a saucepan, boil until soft and then blend to your desired consistency.

Ingredients:

 

1 Whole Broccoli

1 Large Carrot

6 New Potatoes

5 Sticks of Celery

1 Stock Cube (I prefer to use a chicken stock cube for extra flavour)

  • Chop all of the ingredients into small pieces.

  • Load the ingredients into the soup maker.

  • Add 3/4 pint of water.
  • Set the soupmaker to the ‘smooth’ setting.

 

My soupmaker takes a mere 21 minutes to cook a delicious homemade soup.

Serve with bread (or alternatively crackers).

The above recipe makes 2 portions of delicious homemade soup. My 2nd portion is poured into a tupperware tub and stored in the fridge to enjoy the following day.

My homemade vegetable soup is tasty and nutritious. Since with the exception of a stock cube, the soup is made from vegetables, this recipe is great if you’re trying to lose weight. Keep a lookout for more homemade soup recipes.

    I made my first soup the other day. Broccoli and Stilton. It was yummy but really thick.

    I love trying out different soups, my favourite at the moment is butternut squash, but you can make so many now. Yess, most definitely worth it getting a soup maker!
